Built on the grounds formerly occupied by and named after Dr Hillyard, who practised to the poor and rich alike from his residence in the late 1800's.
It is said he carries out the periodical 'late night check up' time to time.
Head Chef Profile: Paul Cunningham. Paul studied catering at BIFHE. He gained experience from the Bucks Head Inn, Dundrum before joining Hillyard House at the age of 19 as Head Chef. He cleverly sources lodal produce for his mouth watering dishes, from Dundrum Bay Fishery to Finnebrogue Venison. There's an obvious love of food and attention to detail at work here, that starts in the kitchen and continues on the dining room floor. (Extract from the Irish News)
